Cowboy Caviar



INGREDIENTS:


2 cans (14 ounces each) black-eyed peas, rinsed and drained

1 can (14 ounces) black beans, rinsed and drained

1 1/2 cups fresh or defrosted frozen corn  (omit corn for lower carb option)

3 chopped roma  tomatoes

1 medium bell pepper, any color variety, chopped

1 small red onion, chopped.

1/2 bunch cilantro, chopped

1 to 2 jalapeños, ribs removed, seeded and finely chopped

1 Lrg avocado chopped

1 cucumber chopped


Sauce


1/3 cup olive oil

4 tablespoons red wine vinegar or lime juice

2 medium cloves garlic, pressed or minced

salt and black pepper to taste

1/8 teaspoon red pepper flakes

1 tsp dried oregano

1 Tbsp Italian seasoning

1 teaspoon maple syrup or honey (omit for lower carb option)



INSTRUCTIONS


In a large serving bowl, combine the drained black-eyed peas, black beans, corn, tomatoes, bell pepper, onion, avocado, cucumber, cilantro and jalapeño.


In a cup, whisk together the sauce ingredients until well blended. Drizzle the sauce over the bean mix until well mixed. Season to taste with additional salt and pepper.


For best results, let the mixture marinate and chill in the fridge  for at least 30 minutes before serving.


Serving suggestions: Don’t forget the chips! Make sure you are choosing a whole multi grain healthy chip to keep this a healthy high fiber dinner!  Also a great serving option is over a bed of mixed greens, add grilled chicken for a southwest style salad.
