Protein and Fiber Packed Chickpea Salad
Ingredients
1 15 oz can chickpeas drained and rinsed
2 whole cucumbers chopped
1 C cherry tomatoes
1 small sweet onion diced
1 C basil chopped
2 Tbsp lemon juice
1 Tbsp olive oil
1 Tbsp balsamic vinegar
1 tsp Italian seasoning
1 tsp honey
salt and pepper to taste
2 Tbs fresh parsley, minced
red pepper flakes if looking for a spicy option
Instructions
In a small bowel combine lemon juice, olive oil, balsamic vinegar, Italian seasoning, honey salt and pepper and red pepper flakes mix well and set aside.
In a larger bowel mix together all remaining ingredients except parsley, pour the above mixed ingredients over cucumber/tomato/chickpea salad and toss. Place in bowels to serve and top with fresh parsley.
