1/2 cup powdered sugar free sweetener (stevia or monk fruit)
1/4 cup heavy cream
1 C cup chopped walnuts, divided (Optional)
1 C unsweetened coconut chunks (Optional)
-Instructions-
Using a bread loaf pan, line with parchment paper. leave edges long enough to pull fudge out once set. Rub coconut oil on parchment paper for a non-stick coating.
In a small saucepan over low heat, begin melting your butter and chocolate chips together. Stir continuously until all melted. Constant stirring- it will burn easily
Once melted, add your heavy cream and sweetener. Continue to stir until smooth. Stir in 1/2 cup chopped walnuts and or 1/2 C coconut chunks if desired
Pour mixture into a bread pan. Sprinkle remaining chopped walnuts and coconut as topping over your fudge.
Chill in the refrigerator until fudge is set. Should take about 1 to 2 hours. Slice into small square equal portions and serve. Keep stored in the refrigerator in an airtight container.
