Sushi Bowls using Cauliflower Rice
Full of nutrition, super low carp, keto friendly version of sushi. When you craving sushi but want to eat healthy try this to satisfy your craving. Such a refreshing lunch or dinner for a hot summer night. All the flavor of sushi without the carbs!
INGREDIENTS-
2 C cauliflower rice ( see recipe link below for this or use frozen bag of cauliflower rice)
8 ounces extra small cooked shrimp or 1 small package crab meat
2 packages of roasted seaweed snack. Or sushi seaweed sheets
3 tablespoons rice vinegar
3 tablespoons rice vinegar
3 tablespoons mayonnaise
4 teaspoons sriracha
3 small avocado mashed
2 Cucumbers diced
2 carrots shredded
1 Tbsp toasted sesame seeds for serving
Furikake rice seasoning to taste (approx. 2-3 Tablespoons)
Salt and pepper to taste
Sushi ginger slices if desired
Fresh jalapeno slices if desired
INSTRUCTIONS
Prepare cauliflower rice and allow it to fully cool. Once cooled add vinegar and soy sauce mix well. Then stir in Furikake sauce to desired taste
In a small bowl, mash the avocado and add salt and pepper to taste. Set aside
In a medium bowl, mix together shrimp or crab meat, mayonnaise and sriracha. Set aside
In another small bowl, mash the avocado with salt and pepper. Set aside.
Time to layer the sushi bowls-
Using 4 bowls divide all ingredients evenly between the 4 bowel in this order.
Place seaweed sheets on the bottom.
Cauliflower rice, lightly press flat on top of seaweed sheets
Next layer the diced cucumbers on top of "rice"
Spread the mashed avocado on top covering the cucumbers
Add the shredded carrots on top of avocado
Spread the shrimp/or crab mixture on top of carrots.
Sprinkle more Furikake and Top with toasted sesame seeds.
Add ginger and jalapenos on top if desired.
Serve Immediately or place in the fridge and serve up to 24 hrs after making.
